Preheat oven to 400 degrees Fahrenheit.
Coat whole chicken in Extra Virgin Olive Oil….about 1/4 cup
Empty 1 oz Mojo seasoning packet onto chicken.
Rub thoroughly onto Chicken…inside and out and under skin.
Add white vinegar onto…about ¼ cup. Then add 1 cup water to pan.
Bake at 400 degrees for 30 min.
Then lower oven to 325 degrees and bake for 1 hour until you reach an internal temperature of 185 degrees.

Rinse the rice. Set aside. Rinse Gandules, set aside. Heat 1/2 cup oil in caldero. Add spices and gandules. Feel free to add sofrito and other veggies. Add rice, mix well and 3 cups water. Bring to a boil and let water evaporate. Lower heat, cover and cook for 30 minutes until soft.
- 3lbs. Beef Chuck Meat.
- 2 tbsp oil.
- 2 potatoes.
- 2 carrots.
- 1 celery stalk.
- 1/2 onion.
- 1/2 red and green peppers.
- 1 oz packet of Beans, Beef and Stews Blend.
- 4 cups of water.
Use Beef Chuck Meat 3lbs. Cut into large cubes.
Place 2 tbsp oil in a pot. Add beef and sear until golden brown. Add 2 potatoes, 2 carrots, 1 celery stalk and 1/2 onion, 1/2 red and green peppers…all diced.
Empty 1 oz packet of Beans, Beef and Stews Blend.
Add 4 cups water and cook for 1 hour until meat is tender. Enjoy!
